I was placing my Fresh Direct order when Rose sauntered over and asked me to order salmon. It was kind of a funny request coming from her, so I assumed she was feeling fatty-acid depleted and ordered some up.
This salmon baked in parchment recipe is a favorite. I happened to have some leeks and white wine in the fridge so it was the perfect choice. When I don’t have leeks and wine, but I have lemons and basil, this other salmon baked in parchment recipe is the one I make. They’re both good, quick and easy.

I really want to make that, but I’m having trouble wrapping my head around the origami instructions as far as the parchment paper goes! :)

So glad you mentioned. Martha’s recipe is actually a valentines day recipe, thus the heart-shaped parchment pieces. What I do is take a square of parchment, lay the salmon in the middle, dress it per the instructions, bring the top and bottom sides of the sheet together above the salmon, and roll/fold them down until you reach the top of the salmon. Then fold the left and right sides under the salmon. I hope that makes sense because it was hard to describe ;)

P.S. Here’s a link to an image of how it looks when wrapped, if that helps: http://www.health-bent.com/wp-content/uploads/2011/02/wrap.jpg
